Sunny Side Pepper Eggs

Delicious and healthy sunny side up eggs cooked inside bell pepper rings make a perfect addition to any breakfast or brunch.

Do you love eggs? They are a wonderfully nutritious food. In fact, they’re one of the most nutritious foods on the planet. The protein in eggs has just the right mix of essential amino acids needed to build tissue fiber. Yup, that’s why Sylvester Stallone ate raw eggs in the movie Rocky.



But who likes to drink raw eggs in the morning? Yuck! Not me. To get the same benefit, I say skip the raw egg drink and make my recipe for Sunny Side Pepper Eggs instead.



This recipe is for sunny side up eggs made inside sweet bell pepper rings. The combination of eggs and peppers provides a healthy dose of fiber and protein to fuel you for the day ahead. Also, it can help you feel full longer, so you’re not tempted to snack before your next meal. It is also a Keto-friendly recipe and is gluten-free.



You can use green, red, yellow or orange peppers for a brightly colored plate. The finished dish is meant to resemble flowers, so it’s a great way to get your family to eat a healthy breakfast. You never know, these eggs just might put a smile on your face first thing in the morning and give you a sunny outlook all day.



Sunny Side Up Pepper Eggs



Farm Fresh Eggs




If you have access to farm-fresh eggs, they will make the absolute best fried eggs. But since most people use store-bought, you’ll want to take your eggs out of the refrigerator and let them come to room temperature about 30 minutes before cooking. Or, you can soak the eggs in warm water for about five minutes to bring them to room temperature. 



Choose your skillet. Most people like using a nonstick pan because eggs like to stick (especially if the heat is too high), but I love my stainless steel frying pan. It was a bit of a learning curve when I first started with stainless steel. You need to warm the skillet, then give it the “water test”. If you drop a tiny amount of water into the pan and it beads into a dance, you know your pan is ready. This recipe is ready in about 12 minutes and makes 4 servings.





  • 2 large bell peppers
  • 1 tbsp vegetable oil
  • 8 large eggs
  • salt and pepper, to taste
  • fresh parsley, chopped





Start by carefully slicing the bell peppers into four ½-inch rings.  








Leftover Sunny Side Pepper Eggs will keep well in an air-tight container in the fridge for up to 3 days.

  • 2 large bell peppers
  • 8 large eggs
  • 1 tsp vegetable oil
  • salt & pepper to taste
  • fresh parsley chopped


  • Carefully slice the bell peppers into four ½-inch rings. Toss out the stem and remove all seeds and white flesh from the pepper rings.
  •  Heat the oil in a skillet on medium. Cook the peppers for 3 minutes.
  • Turn the peppers over and crack an egg into the center of each ring.
  • Cover and cook until eggs are done, approximately 7-8 minutes.
  • Sprinkle eggs with salt and pepper to taste, and garnish with fresh parsley, if desired.
